The chain of Lviv Croissants establishments together with chef Yevgeny Klopotenko created the Borsch croissant. The novelty was released for Ukrainian Borscht Day.

The basis is a grain croissant, and the filling is pork in a tomato-plum sauce with vegetables, smoked pear and sour cream with greens and garlic.

Borscht is the main first course of Ukrainian cuisine. In 2022, on the initiative of Yevhen Klopotenko, it was included in the list of intangible cultural heritage objects of UNESCO as in need of protection. And the purpose of Lviv Croissants’ collaboration with a famous restaurateur was to once again remind about the importance of preserving the cultural values โ€‹โ€‹of Ukrainians.

“It makes no sense to argue about which borscht recipe is correct,” says Oleksandr Volodin, chief technologist, brand-chef of the Lviv Croissants chain. “Borscht is like Ukraine: it is different in every region, but always whole and native. , despite the many cooking options, unites all Ukrainians. Even if it is borscht in the form of a croissant.”

Croissant Borsch is a unique dish in which the traditions of Ukrainian cuisine meet the author’s vision of Yevhen Klopotenko. The basis is a grain croissant, which first appeared on the Lviv Croissants menu, and the filling is a combination of pork in a tomato-plum sauce with vegetables, smoked pear and sour cream with greens and garlic.

“Croissant Borsch is not just an experiment,” says Yevhen Klopotenko. “It is an attempt to reach the heart of everyone who has tried this unusual combination at least once. When we rethink traditional dishes, we show the world that Ukrainian cuisine is not stamped with stereotypes. It is alive and flexible. It is developing and surprising. And I really want as many people as possible to experience it – both within the country and beyond.”

Not everyone has the opportunity to go to the “One Hundred Years Forward” restaurant in Kyiv and taste borscht with smoked pear and plum liqueur according to Yevgeny Klopotenko’s recipe. But thanks to the chef’s collaboration with the Lviv Croissants network, millions of Ukrainians in all regions will be able to try a croissant with the taste of the iconic Klopotenko borscht.
