The Japanese operator of the chain of conveyor restaurants Kura Sushi has developed an alert system based on artificial intelligence to prevent spoilage of dishes by customers. This is reported by NHK. The need for this arose after videos of unhygienic food raffles began to spread actively on the Internet. In the footage below, diners can be seen licking plates of food before putting them back. And some simply take part of the food from the plates on the conveyor belt. If the AI-based system’s camera detects someone returning a plate that a customer has touched to the conveyor, the chain’s headquarters will be alerted. After that, the head office will contact the manager, who will approach the intruder. “We find these videos extremely disturbing and threaten the very foundation of the conveyor belt sushi business model,” said Hiroyuki Okamoto of Kura Sushi. The company says that such a system is the first such development in this industry and will be rolled out in other restaurants.
