Japanese researchers have tried to genetically modify chickens to produce eggs that do not cause allergies. A recent study was published in the journal Food and Chemical Toxicology, reports Medical News Today. Most often, an allergic reaction occurs to proteins contained in egg white – ovalbumin (OVA) or ovomucoid (OVM). Scientists from Hiroshima University managed to get rid of the allergenic protein ovomucoid from eggs by changing the genes of some chickens. At the same time, this method of producing hypoallergenic eggs requires further research. Read also: Scientists created a meatball from the cells of an extinct mammoth. Eggs are widely used in various food products, including bakery products, sauces and other foods. People with allergies should carefully read labels and avoid products that contain eggs or ingredients derived from them. In addition, such patients cannot be vaccinated with vaccines made on the basis of egg white. Scientists decided to investigate how to change the genetics of chickens to make life easier for people with allergies. They focused on the study of the ovomucoid protein, which is the cause of many types of egg allergy. It turned out that chickens with altered genes can hatch eggs without ovumocoid. The study used transcription activator-like activator effector nucleases (TALENs), which are proteins that help modify DNA. Scientists deleted the ovomucoid gene from two breeds of chickens and tested the resulting eggs for safety. It turned out that the eggs of genetically modified chickens did not contain ovomucoid or its mutations. Such a product may be safe for allergy sufferers – although this method still needs to be studied. Read also: How to cook healthy and safe eggs. Tips “These results indicate the importance of safety assessment and show that eggs laid by hens without OBM [овомукоїду], solve the problem of food allergies and vaccines. The next stage of research will be to evaluate the physical properties and processability of eggs containing ovomucoid, as well as to confirm their effectiveness through clinical trials,” said the author of the study, Ryo Ezaki, associate professor at Hiroshima University (Graduate School of Integrated Sciences for Life). Another scientist Blaine Tesfu, who was not involved in the experiment, commented in Medical News Today that the new study could significantly help people with egg allergies. “By breeding chickens without OVM, people will be able to consume eggs and products derived from eggs without fear of an allergic reaction . This can greatly expand their diet and reduce food anxiety. Moreover, since eggs are used in the production of some vaccines (for example, against the flu), this development can potentially make them safer for people with egg allergies,” Tesfu adds.
