Ingredients:

  • 85 grams of bitter chopped chocolate (70-74% cocoa) – about ½ cup
  • 3 tablespoons of butter, cut into cubes
  • 3 tablespoons of sugar
  • 1 large egg
  • 1 large yolk
  • ½ teaspoon of vanilla extract
  • ⅛ teaspoon of salt
  • 2 tablespoons of flour
  • powdered sugar (optional)

Preparation:

Step 1

Preheat the oven to 220°C and grease the mold with butter.

Step 2

Combine the chocolate and 3 tablespoons of butter in a heatproof bowl set over a pan of simmering water.

Cook the mixture, stirring occasionally, until completely melted and of a uniform consistency.

Alternatively, place the mixture in a bowl (do not use metal utensils) and microwave for 30 seconds, stirring, until completely melted and smooth, about 1 minute.

Remove from heat and set mixture aside.

Step 3

In a medium bowl, mix 3 tablespoons of sugar, egg, egg yolk, vanilla and salt.

Beat vigorously until mixture is thick and frothy, about 2 minutes.

Sift the flour until smooth.

Step 4

Using a spatula, add the chocolate to the egg mixture and gently mix until smooth.

Step 5

Pour the mixture into a baking dish. Bake for 12-14 minutes or until the edges are set and risen, but the center is still soft when lightly pressed.

You can also cover the dough and refrigerate it a day in advance. Add an extra minute or 2 to the baking time if baking the cake straight from the fridge.

Step 6

Use a spatula or a small knife to loosen the edges of the cake from the pan. Place the plate on the pan and carefully turn the warm cake over.

Sprinkle the dessert with powdered sugar and serve with ice cream or whipped cream.
