The tradition of preparation and consumption of ceremonial bread for St. George’s Day in the village of Krynychne (Odesa Region) was included in the National List of Elements of the Intangible Cultural Heritage of Ukraine. Such an order was signed by the Minister of Culture and Information Policy Oleksandr Tkachenko, the press service of the ICIP reported. In the village of Krynychne, Bolgrad district, the Bulgarian ethnic minority has been celebrating St. George’s Day, which is celebrated on May 6, as a special tradition for almost 200 years. For this holiday, the eldest of the women in the family bakes five ceremonial loaves of dough, mixed with homemade sourdough, the basis of which is hop and wine yeast, and a wooden trough decorated with flowers, with the addition of salt and water. The dough is prepared in a small room with an oven, which, if necessary, makes it possible to maintain the required temperature. 3 doughs are made by five loaves, which have their own special names: Bogovitsa (in honor of God and the Holy Mother of God), Rangel (in honor of St. Archangel Michael), Korovai (in honor of St. George) and two Ushcharky (symbol of the holiday) . Bogovitsa is a rounded, slightly flattened shape, decorated on top with four crossed bundles folded in the form of a flower, which symbolizes the sun and the spring awakening of nature. Rangel is a shaped bread made of two or more bundles with a through hole in the middle, into which a cup of wine is inserted. A loaf of bread is a tall festive bread, made from interlaced bundles of various amounts. Uschcharka is a round, slightly flat bread with obligatory symbols: an open harness located around a circle (open sheep pen), an odd number of small dough balls (sheep), a harness in the form of a hook (shepherd’s staff) and a human figure (shepherd).
