In California, water recycling company Epic Cleantec and a brewery have created beer from wastewater. The drink was made from recycled water from the showers, laundry and sinks of a 40-story apartment building in San Francisco. In San Francisco, they have equipment to collect, treat and reuse water for non-potable purposes. The company’s goal is to educate people about the possibilities of water reuse, and the current commercial regulations for recycled drinking water are strict. “We wanted to do something interesting that would be an interesting tool to talk to people, get them interested, and also show the untapped potential of water reuse. We chose a beer that would be more versatile as opposed to a craft beer like an IPA that some people like and some don’t,” says co-founder and CEO of Epic Cleantec Aaron Tartakovsky. A journalist from The Guardian tasted OneWater Brew and liked it. The taste was “dry” and “pleasant”. “It was nice, sour and drinkable. There was no shower or laundry notes. If this beer was served in a bar, I would never have guessed where it came from,” writes Matthew Kantor. Epic Cleantec received positive reviews from other tasters as well. “I think a lot of people were obviously skeptical about the project at first or didn’t dare to try the beer.
