Fragrant ginger cookies: three simple recipes

Gingerbread cookies are delicious and easy-to-prepare pastries that German monks began to prepare as early as the 13th century. To this day, such cookies are enjoyed in many parts of the world, they are especially popular during the Christmas holidays.

Usually, various culinary spices are added to it – cinnamon, cardamom, cloves. Thanks to them, this pastry has an incredible aroma.

Recipe for cookies with ground ginger

Ingredients:

  • 3/4 cup of butter;
  • 1/4 cup of powdered sugar;
  • 4 Art. spoons of honey;
  • 1 egg;
  • 2 cups of flour;
  • 2 teaspoons of soda;
  • 1 teaspoon of ground cinnamon;
  • 1 teaspoon ground cloves;
  • 1 teaspoon of ground ginger;
  • 1 teaspoon ground nutmeg.

Method of cooking

Mix the butter, sugar, honey and egg in a large bowl until light and fluffy. In another bowl, mix flour, baking soda, cinnamon, cloves, ginger and nutmeg. Then you should combine both mixtures.

One tablespoon of dough should be formed into a small ball. Next, all the balls should be rolled in powdered sugar and placed on a baking sheet lined with parchment, at a distance of 5 centimeters from each other.

If you want the cookies to be softer, bake them for 12 minutes at 180°C. For a more crispy one, you should keep it in the oven for 3-4 minutes longer.

Cooled cookies should be stored in an airtight container.

Recipe for cookies with fresh ginger

Ingredients:

  • 100 grams of butter;
  • 75 grams of brown sugar;
  • 1 Art. a spoonful of grated fresh ginger;
  • 100 grams of honey;
  • 250 grams of flour;
  • 1.5 tablespoons of ground ginger;
  • 1 teaspoon of soda;
  • 1 egg yolk.

Method of cooking

Preheat the oven to 180°C. Line two large baking sheets with parchment paper.

Melt cubed butter and sugar in a saucepan over low heat, add fresh ginger and honey and let cool.

Mix flour, ground ginger and baking soda in a bowl with a wooden spoon. Gradually stir in the cooled sugar mixture and egg yolk. Next, knead the dough slightly.

Divide the dough into balls weighing 20 grams each and place them on the prepared trays. The distance between cookies should be at least 3 centimeters. Bake for 8-10 minutes until golden brown.

Gluten-free gingerbread cookie recipe

Ingredients:

  • 6 Art. a spoonful of butter;
  • 3/4 cup of brown sugar;
  • 1 large egg;
  • 1/4 cup of honey;
  • half a teaspoon of pure vanilla extract;
  • 125 grams of chickpea flour;
  • 140 grams of sorghum flour;
  • 2 teaspoons of ground ginger;
  • 1.5 teaspoons of ground cinnamon;
  • 1/4 teaspoon ground cloves;
  • 1/4 teaspoon ground nutmeg;
  • 1/2 teaspoon of salt;
  • 1/2 teaspoon of gluten-free baking powder;
  • 1/2 teaspoon of soda;
  • 1/4 cup of powdered sugar.

Method of cooking

In a large bowl, use a mixer to combine the butter and brown sugar. Add the egg, honey and vanilla and beat until combined.

In a separate bowl, mix flour, spices, salt, baking powder and baking soda. Beat them with a mixer. Add the dry ingredients to the wet ingredients and mix until smooth. The dough will be thick.

Cover it and put it in the fridge for about an hour. In an airtight container, it can be stored there for several days.

Use a tablespoon to scoop the dough and form it into balls. Roll each ball in powdered sugar and place them on a baking sheet lined with parchment, about 5 centimeters apart.

Bake in an oven heated to 180°C for about 10 minutes. It is important not to overbake the cookies: they should crack on top, but remain slightly soft inside. Cool the cookies on the baking sheet for about 5 minutes, then use a spatula to place the cookies on a cooling rack.​
