Golubtsi was recognized as an intangible cultural heritage of Ukraine from Odesa

“Preparation of the Ukrainian traditional dish “Golubtsi” was added to the National List of Elements of the Intangible Cultural Heritage of Ukraine from Odesa.

This is stated in the order of the Ministry of Culture and Information Policy, the Odesa Regional Center of Ukrainian Culture reports.

They note that cabbage rolls are one of the main dishes of the local cuisine of Odesa, which is also common among representatives of national minorities living in the region.

In particular, it is about Bulgarians, Moldovans and Gagauz people.

“For Odeshchya, cabbage rolls are not just an envelope made of cabbage. In the north of the region, in the Kodim Oblast, when preparing them for a wedding, housewives sit in a circle, sing folk and ritual songs and “twist” cabbage rolls.

Usually, it is up to 10 pots of 8-10 liters each. – noted in the Odesa Regional Center of Ukrainian Culture.

In the village of Hlybochok, near the Kuyalnytskyi estuary, housewives add three types of meat to the filling, and stewed cabbage rolls must be in homemade tomato juice.

In the south of the Odesa region, in the village of Orlivka, golubts are called “carmale”, which means “to wrap” in Turkish, they add in the center of Ukrainian culture.

“Sarmale is mainly made from fresh grape leaves, which are scalded in boiling water with salt to make them soft. The filling is made from rice, minced pork, onions, carrots, and greens are added and stewed in a cauldron over low heat.” – say experts of the center.

They add that in the Bulgarian village of Gorodnoe golubtsi have another name – clumps.

They, like “carmale”, are prepared from steamed grape leaves, but the filling consists of rice or bulgur with the addition of a number of herbs, in particular, dill, parsley and mint.
