Microfiltered milk is a modern drink for the first time in Ukraine

Recently, microfiltration technology was first used in the Ukrainian dairy industry. Today, this is a modern method of cleaning, which has already become popular abroad. Ukrainian Pravda learned how the first microfiltered milk in Ukraine is made. Lustdorf often sets trends in the milk market. Back in 1997, the manufacturer surprised consumers with dairy products with a long shelf life, in 2002 – released the first portioned cream, in 2012 – the first lactose-free milk, and in 2018 – the first plant-based drinks. In 2021, Lustdorf became interested in microfiltration, an advanced milk purification technology used by leading producers in Poland, Italy, and Canada. Since then, even before the start of the war, the company has invested more than 1 million euros to implement milk production technology according to modern world quality standards – and in Ukraine. In general, the Lustdorf company is one of the three largest Ukrainian exporters of dairy products, which are supplied to more than 35 countries around the world. The company says that it is the competition with foreign manufacturers that encourages the constant development of its own Ukrainian product. How is microfiltered milk produced? The Lustdorf company collects cow’s milk of the “Extra” variety from verified farms in the Vinnytsia, Khmelnytskyi, Kyiv, Poltava, Cherkasy, Kirovohrad and Sumy regions. All milk raw materials from the 50 best farms – which is more than 400 tons of milk every day – are carefully selected before production. “After laboratory quality control, the milk is subjected to microfiltration: it is heated and passed through thin ceramic membranes, which eliminate up to 99.9% of bacteria and their spores – this is a high level of purification that is difficult to achieve with other methods. After purification, the milk is pasteurized at a temperature of 72°C. Such “gentle” pasteurization allows you to preserve the pure milk taste of milk, its fats, proteins and carbohydrates, micro- and macroelements and vitamins. Thanks to microfiltration and gentle pasteurization, we have extended the shelf life of milk up to 21 days. While ordinary pasteurized milk can remain fresh for a maximum of 14 days,” explains Lyubov Polishchuk, chief technologist of Lustdorf. After “gentle” pasteurization, the milk is cooled, packed in a protected package and sent to the table. The entire production process is automated and without direct human contact. In summary, what are the advantages of microfiltered milk? Consumers prefer microfiltered milk, because thanks to innovative technology it: undergoes a high level of purification from bacteria and spores; retains its useful properties in the composition; has a natural taste, without the aftertaste of pasteurization; keeps freshness longer. Despite the war, the Lustdorf company managed to continue the initiative started even before the full-scale invasion: microfiltered pasteurized milk from TM Selyanske appeared on the shelves of supermarkets at the end of last year, and Ukraine is moving forward together with advanced world technologies – everywhere and in spite of everything.
