Swiss researchers have created a tool based on artificial intelligence that recognizes adulterated wine.
An AI program was used to analyze compounds in wine and trace its origin, The Guardian reports.
“There’s a lot of wine fraud where people make some mash in their garage, print labels and sell it for thousands of dollars.
We have shown for the first time that our chemical methods are sensitive enough to distinguish one from the other.”says Professor Alexandre Puje from the University of Geneva in Switzerland.

To “teach” the program, the scientists turned to gas chromatography – a special physico-chemical method for the distribution of substances, which is usually used in laboratories to separate and identify the compounds included in the mixture.
Scientists used this method to analyze 80 wines collected over 12 years from seven different estates in the Bordeaux region of France.
“The first thing we saw were clusters that corresponded to certain châteaux. This immediately told us that there is a chemical signature specific to each château, regardless of the vintage. It is an overall pattern of concentration of many molecules that distinguishes each château.”– says Puje.
Many factors, from the grapes and soil to the microclimate and winemaking process, affect the concentration of compounds found in the wines of each château.
The program the scientists are working on tracked the correct chateaux with 99% accuracy. At the same time, its ability to distinguish wine harvests has 50% accuracy.
Although fraud detection is the most obvious application of the program, Alexandre Puje believes that this approach may be needed to monitor wine quality throughout the production process.
